There is nothing like being able to make something quick in the morning. A frittata is one of my go to morning meals. A frittata can be made with just about anything. This frittata is made with pantry or staple ingredients!
This is very informal. Grab your ingredients. Here is a quick list. Again, a frittata can be made with almost anything on hand. Ready, set, GOOOOOO!!!!!
Frittata Ingredients
8 large eggs (I used fresh eggs from our chickens.)
2 tbsp butter or olive oil
1 cup button mushrooms (or your choice)
6 cups fresh spinach
1-2 cups sliced Roma tomatoes (use as much as you like)
1/4 cup diced onions (I love onions so I added a little more.)
1/4 tsp garlic powder
1 tsp dried oregano (optional)
1/8 tsp ground pepper
1/4 tbsp salt
1 cup shredded cheddar (or your choice of cheese)
1/3 cup shredded parmesan
1/3 cup heavy cream
*Optional fresh mozzarella medallions on top
Preheat your oven to 400° F.
Now, let’s prep the egg batter. Whisk together eggs, heavy cream, shredded cheese, and all seasonings. Be careful not to over whisk. Set to the side.
Using medium heat, warm butter or olive oil. Begin adding the onions. Let them cook for about 2-3 minutes. Keep them moving. Mmmmm…love that smell! Next, add mushrooms and cook for another 2-3 minutes. The mushrooms should begin to release their water. Now, add the spinach. Stir frequently. About every 30 seconds should do it.
*If you would like to move your veggies to another pan, now is the time to do that. I prefer to add my egg mixture to my cast iron pan while my veggies are in there.
Add the egg mixture to the pan. Add a little more shredded cheese over the top and top it with sliced mozzarella. You may choose to use a different cheese.
Bake in the oven for about 30-35 minutes. This dish is great alone or with breakfast meat. It is also a wonderful lunch option. I recommend reheating the frittata in the oven. The microwave tends to make it a little rubbery.
Remember a frittata can be made with just about anything. It’s a fantastic way to use extra veggies that you have on hand.
